Lost me at ‘acetone’ and ‘epoxy’. I have limited experience with those and what I do have isn’t good.
‘Hand… I know that as a ‘French finish’ and it gives good results.

Not sure if I'd bother fine-polishing a horn. At best, I've vigorously rubbed back an application of beeswax with canvas, giving a soft shine.

Sounds like your application was too heavy. Multiple light coats rather than fewer heavy coats. If you use a "flood" coat, remove the excess before it starts getting tacky. Normally that's what I would think too. But this is heavily thinned with acetone. I'm pretty certain that the ratio of epoxy to hardener was off, with not enough hardener.
It will work out. Just taking more time than I hoped. That will do it. With epoxies, they always build a little bit of tolerance into the mix, but the ratio's still have to be as close as possible or these things happen. Where folks often get into trouble is when they only "eyeball" the mix rather than careful measuring. Gus

Epoxies don’t cure like other finishes. If it’s gummy now, it’s likely to always be gummy. I’d scrape off and begin again.

You could try wiping with acetone (and steel wool) to remove the tacky finish.

I was using one of those epoxy setups packaged as two tubed attached together using one plunger like a syringe,, with a dispenser tip that is supposed to mix the two components. The plunger came out when I pulled back on it to draw the material back so I could remove the cap and place the nozzle on it. I think this where things started to go wrong.

If it does, that could be even more of a disaster. I would try using acetone and a wood scraper, myself. Gus
