FWIW, and even though I grew up on the Mississippi River in the Midwest; Oyster "Stew" was and remains a family treat, though the way we have always made it is actually a soup rather than a stew. My Sister continues to include it in Family Holiday meals.
Anyway since moving to Virginia in the early 70's, where oysters are much more available and less expensive, we learned something about buying the raw/shucked oysters here. Make sure you get the SMALL oysters as the medium and large ones are so tough, they are almost inedible when used whole.
Of course I imagine in the period when you "got whatever you could harvest," and jerked the larger oysters, they probably cut up the jerked oysters into small pieces and after slow cooking in the hominy, would not have been too bad.
