Hawkeyes, do you know of any hand grinders I can get that aren't really expensive? When I look up "hand grinders", I get hand grinders for expresso coffee.
Try a web search for "hand crank grinders" or look on ebay, your local craigslist, and my favorite...summertime fleamarkets. The demand for these is low, and I wouldn't pay more than $15 for one. They will, by the way, take modern grindstones without the need for special bushings or adapters. Also, ask anyone selling used/old woodworking f they have one or know where there is one.
When you find one, crank the handle and pay attention to the gearing noises inside the casing. These were normally made with a removable cover so they could be cleaned and lubed, and some with oil reservoirs to keep the gears working smoothly. These haven't been widely used in decades and often the grease inside has hardened. You may need to crank the handle till things start to loosen up. If it works smoothly without binding, all external parts are there and not broken or cracked. If you can open the casing check inside to make certain none of the gears/teeth are cracked or broken.
Pass on the problem children, and I repeat, don't pay more than about $15 for one in good working condition.
I have three of these in my wood shop with different grits, for shaping and sharpening woodworking tools.

Your choice - it will be a learning experience either way. Most people sell themselves short on their abilities - many of the skills I attempted in this hobby were new to me and I had little idea how they would turn out. I forged ahead regardless and was usually pleased with the results. Some I tried more than once and my results improved (you should see the first few shirts I made compared to the hand-sewn shirts I make now - same with the first gun I built). I'd never made a knife or built a gun until I did.... BTW - the sheath was made from a rawhide dog-chew. You find raw materials in odd places. HAHAHA!! Used more than one dog chew to make a knife sheath, In regards to the Old Hickory, I was under the impression that Shotdeer was replacing it with his own scales. I would take a stab at the Old Hickory first as it its cheaper and then take on the Cartouche kit.. As BlackHand stated, the more attempts you make the more your skills and confidence get honed. I find it goes in stages, you start small and as time goes buy your kit and clothes look how you want and you built your own guns. I think I'll always be evolving and I'm looking a pistol kit right now waiting for the inspiration to take it on!! LOL

Looks like an Old Hickory Slicer that has been ground to remove the blade embossing (which is known to vary in depth depending on the age of the knife), something also done by a friend on the knife he carried for some time until I made him a scalper with a diamond handle like the one shown above.

I'm going to shoot for the stars with this knife, but I'll fall short, maybe land on the moon, but hey, that's just as good! I don't think I'm in over my head, but I guess we'll see! But I have a vise, and will get some more files, and I'm agonna get me a grinder, so, I shouldn't mess it up to much......

With that kit, you really shouldn't need much more than a drill, files and sandpaper. PLEASE ask lots of questions, as there are a few knife-building/handle-attaching tips that will make the process easier and you'll keep more of your hair (instead of ripping it out in frustration).

And now I've learned that TOTW is not open on Saturday, Sunday(that's understandable), OR Monday. I am about to go bonkers over that.

So I don't get on anyone's bad side, would this thread be the correct place to post questions about the knife as they come up? Or should I start a new thread? I just don't see that as necessary.

Post away! This is your site as much as mine. Treat it as if you were at home - minus the walking around in your underwear part....
