Coming along great sir.
We always grew a couple of pigs out each year on the farm for meat. Dad did bacon the last few times, very primitive setup but by gosh was it delicious!

This is my first time - wanted to make bacon for years and finally had the time & resources. Until Winco (grocery store/chain) moved in a year or 2 ago, there was no pork belly available locally.

I got the "seal of approval" for the bacon I made from a friend.
Italian Pancetta is next followed by dried/cured sausage...casings arrive Monday.
