One of the Stillwater Woodcraft videos by Steve Davis is 'Rashers and Rum', which might be interesting to some. www.youtube.com/watch?v=6K0OpwyVOxsFrom a bit earlier, 1729, reported by Wm. Byrd II in 'Dividing Line betwixt Virginia and North Carolina,' is what must be a very similar dish. “…it was agreed that our chaplain might safely take a turn to Edenton, to preach the Gospel to the infidels there, and christen their children. He was accompanied thither by Mr. Little, one of the Carolina Commissioners, who, to show his regard for the Church, offered to treat him on the road with a fricassee of rum. They fried half a dozen rashers of very fat bacon in a pint of rum, both which being dished up together, served the company at once both for meat and drink.” Spence

Hmmmmmm. How does one fry bacon in liquid? Especially flammable liquid? I've flavored vodka with bacon, but not tried to cook bacon in alcohol.

I flambe'd a browned Muskrat a couple times - maybe that is what was done (fry then douse). The rum does impart an interesting flavor, though might be a bit much in quantity - rather easier to drink it from the bottle.

Hmmmmmm. How does one fry bacon in liquid? Especially flammable liquid? I've flavored vodka with bacon, but not tried to cook bacon in alcohol. I would think that the rum would evaporate pretty quickly leaving the rashers to fry in the now rum flavoured fat! Keith.

I've never been a fan of bacon, although I can't say that about pork chops, pork used in sausage, "Speck" in potato salad, or any form of sausage for that matter. That probably comes from having German/Austrian roots....
Cooking with rum? My inclination is to drink it, nor cook with it, although I use beer for soup stocks, wine to deglaze pans and added to certain dishes and pastries.
