Must take a dozen per man to make an appetizer. The little red squirrels here taste like pine. If one soaks them in heavily salted water long enough most, but not all, the pine taste can be reduced.

2 or 3 in a pot of stew will feed 4-5 guys. I was also told years ago these tasted like pine, but it wasn't true. These little guys taste more like a cross between beef and venison...

Montana is great any time of year. No squirrel season either - you can shoot them all year round....

Excellent. Thanks for sharing. What did you do with all those little red squirrels? I decided to cut it up and then rolled them in flour and fried it in a pan, did not taste any pine on that one.

People may have gotten the impression because they tend to be smeared with pitch from eating the seeds of Pine & Fir. Having eaten the seeds myself, they have (at best) a very faint hint of Pine/Fir in the same way Pinenuts do.

Only tried eating the ones we have here a couple times. I could taste the pine,much the same way pronghorn tastes like sage. Won't say I wouldn't try them again, but, I'd rather focus on grey squirrels,,,, we don't have those great big fox squirrels here.

I will say here in the southern Ohio Valley no shortage of fox and greys. As I've come to learn many choose not to pursue squirrel much anymore. Many are to focused on deer, which is fine but IMO the skills learned for stalking, hunting and learning squirrel are invaluable. Plus again they are delicious in any fashion of cookery!
