Regardless of what regional name you use for cornmeal/flour, water, and salt mixed together and fried on a skillet or flat rock by the fire,,,, what consistency are we looking for? I've been playing with this in very small batches in my kitchen and feel like the inside is always just a bunch of moist but uncooked cornmeal.

I've been playing with this in very small batches in my kitchen and feel like the inside is always just a bunch of moist but uncooked cornmeal. Ashcakes, hoecakes, whatever, I make mine with relatively little water & form into size & shape similar to hamburger patties. Use just enough water to hold the meal in shape - anything like a batter is too slurpy. To add a bit of flavor, I have made some using a bit of either honey or molasses mixed in.

I do mine about as Coot describes, a bit too stiff works better than a bit too wet/loose. I never put flour in mine, only meal, salt and water. As a guess, you may be cooking them at too high a temperature. That will make the outside brown before the center sets up. Low and slow works better for me. Sounds like I'm on the right track. Those all look similar to what I've come up with, except the ashes one, haven't tried that yet. I'm thinking the theory of my heat being too high might be the case as well. Today I tried very warm water based on reading elsewhere,,, and about a teaspoon of still liquid bacon grease. Came out better. I also let it sit longer after mixing. Not using flour at all. My cornmeal is of a fineness of almost flour, I can't find my coarser meal.
