From Spence's quote, "The pith of the matured stalk of the corn is esculent and nutritious." Anyone here tried the pith as a food source? I grew up in MAJOR "Corn Country" in Iowa and I never heard of it. Both sets of my Grandparents were not well off having been poor as children, served in WWI and lived through the Depression and just making it into the lowest middle class by the time they retired. I grew up on a lot of "Depression Food" and would have expected to have eaten it as a child had it still been common to eat, but I don't remember ever eating corn pith or even hearing of it having been eaten.
